Food Arranger Kazuhiro Kimura
Kazuhiro began his culinary career at 19, training in Osaka, Florence, and Tokyo. After working as a cooking instructor, he became an independent food arranger, specializing in food production, consulting, and recipe development, with appearances in numerous media outlets. Passionate about regional revitalization and sustainable dining, he collaborates closely with local producers and serves as director of “UB1 TABLE.” He also provides culinary training overseas and leads chef recruitment, development, and supervision at FunBase.

World’s Best Service Professional Shin Miyazaki
In 2012, Shin became the first Japanese winner of the world’s prestigious service competition, “Coupe Georges Baptiste,” and was later featured on NHK’s Professional: Shigoto no Ryuugi. After a long career as maître d’hôtel at Joël Robuchon, he currently serves at a Michelin three-star restaurant while also teaching, conducting corporate training, and giving lectures on the essence of hospitality. As FunBase’s Head of Service, he is responsible for training and guiding all service staff.

FunBase Food & Beverage Department Yusuke Shindo
After graduating from a culinary school in Tokyo, Yusuke honed his skills in both kitchen and service roles at hotels and restaurants. He joined FunBase in 2018 and now oversees private chef services, delivery, and events mainly in Karuizawa. Collaborating with numerous chefs and service professionals, he curates dining experiences that not only meet but exceed client expectations. He also plans various cross-industry collaborations and food events to continually elevate the dining experience.

Farm-to-Table Chef Trained in France Atsushi Mitsuishi
After training at a French restaurant in Tokyo, Atsushi moved to France, honing his skills at top regional and Parisian establishments. He contributed to earning two Michelin stars at “Passage 53” before returning to his hometown of Saku, where he now cultivates herbs and edible flowers. Without owning a restaurant, he continues to captivate Karuizawa’s gourmets through exquisite dishes that highlight local Shinshu ingredients and their perfect harmony with wine.

Modern Japanese Cuisine Artisan Hiroshi Seki
Bringing the refined essence of Tokyo’s Japanese cuisine to Nagano, Hiroshi trained for 14 years at the three-star restaurant “Kadokawa” in Azabu. In 2017, he opened his own restaurant “Benkyo-bashi Seki” in his hometown Komoro, blending traditional Japanese sensibilities with a modern “Azabu style.” His dishes, integrating premium ingredients from across Japan, have earned praise from discerning gourmets in Tokyo and beyond.

Fine Dining Executive Chef Kai Sakurai
Kai began his career at the two-star “La Table de Joël Robuchon,” followed by experience at the three-star “Château Restaurant Joël Robuchon” and “L’OSIER.” In January 2025, he became General Manager of the one-star restaurant “Monolith,” where he continues to refine the art of modern haute cuisine.

We used the service to celebrate a family birthday at our villa in Karuizawa.
Budget
Even within “Japanese cuisine,” there were so many options—kaiseki, sushi, tempura, hot pot—that we had a hard time choosing.
This time we requested a Sushi Kaiseki course.
From flexible menu proposals that three generations could enjoy, to preparation and cleanup on the day, everything was handled with care. They even arranged the cake and supported tableware selections, which was incredibly helpful. Since they can provide services anywhere, we also book them for our home in Tokyo and our villa in Hayama.- 4 adults + 2 children — total approx. ¥100,000

Dinner with Friends
We use the service for gatherings with close friends who come together at a residence in Karuizawa from the city.
Budget
The chef and service staff create a one-night-only private home restaurant. With table coordination and dish explanations, it truly feels like dining at a high-end restaurant.
They propose custom menus along with wine and non-alcoholic pairings from a rich drinks list, which always delights our guests. We’re grateful for the consistently special experiences.- 12 guests — approx. ¥35,000 per person

Post-Golf Tournament Party
We booked the service for dinner after a company golf tournament.
Budget
This time we requested a special concept combining Chinese cuisine with BBQ. With options like Western buffets and sushi, they flexibly accommodate the many preferences typical of large parties—wanting both Japanese and Western dishes, meat and fish, etc.
The atmosphere felt extraordinary yet welcoming, making it perfect for socializing. As the organizer, I appreciated being able to delegate everything and simply enjoy the time with participants.- 30 guests — approx. ¥500,000
